thinking about my former salzburg kitchen colleagues …
salzburg festival season in the kitchen … these 50 days you would spend either desperately working, running down to-do lists without much time to breathe or sleeping a dead-like sleep … there is not much left in between like a day off or time to sunbathe, have a drink or two or feel the
atmosphere of this salzburg, which feels quite different these days.

to-do list

if you would have a drink one evening, you could just not meet the demands the next day. and if you walk out of the kitchen into the crowded streets in the daytime for a rare hour of rest every other day, you’d be blinded by the lights and kicking your heels while trying to pass the crowd … impossible to slow down.

in the kitchen everything is crammed with prepared stock and you might need to fight for empty trays and equipment … trying to finish mise-en-place getting closer and closer to the next deadline, lunch or dinner or late dinner after the concerts.

there was one ritual tough … every night we would strike through one more day of the festival timetable with a thick red line … counting down …

and strange enough is, that i really miss this …
